Alternatively, just use chicken breast meat that is already thin, such as chicken cutlets, chicken tenderloins, or ready-chopped slices of chicken breast.

What kind of chicken to use? Either slice medium to large chicken breasts in half width wise with a sharp knife or place the breast between two sheets of plastic wrap/cling film and pound with a rolling pin or meat tenderizer until around 2cm thick all over. The third option is to buy chicken cutlets that are already thin.

Thin Chicken Breast Recipe FAQs
The first step to keeping chicken nice and moist is to make sure you don’t overcook your chicken. Also, cooking your chicken in a sauce or using a marinade is a good way to retain moisture and to keep flavour locked in.
If you don’t own a kitchen thermometer, an easy way to check if your chicken is cooked is to pierce the thickest part of the chicken with a knife and check that the juices are running clear. If you do have one, insert it into the thickest part of the chicken – it should read at least 165F/74C inside.

I love this idea, but I don’t think I’m understanding the cutting. How does cutting across the width change the depth? Sorry to be a dope, and thanks for any help.
Hello! You’re not being a dope at all! So basically you cut it in half so that it’s half the depth. Just slice it through the middle with a sharp knife. I usually press down lightly on the top with one hand (to hold the chicken steady and to keep my hand out of the way of the knife!) and then slice slowly and carefully. I hope that helps!
