Liven up smoothies, cocktails, no-bake desserts, pancakes, yogurt, oatmeal and more in just 5 minutes with this super easy strawberry purée. It keeps for up to 5 days in the fridge, or you can freeze it in ice cube trays to throw into smoothies or to use in so many other ways.
Wash and roughly chop the strawberries. If using frozen, defrost them in a colander so that any excess liquid drains away, then blot with kitchen paper to remove as much moisture as possible.
Put all of the ingredients into a food processor or blender. Pulse the mixture until smooth (20 to 30 seconds).
Your puree is ready to enjoy in smoothies, soft drinks, oatmeal, yogurt and more. If you'd like to drizzle it over cakes or cheesecakes, I would recommend gently reducing in a small saucepan until slightly thickened.
Keep any leftover puree in an airtight container or glass jar in the fridge for up to 5 days. Or freeze in ice cube trays then in a freezer proof bag or container for up to 6 months.

How much purée the recipe makes: Between one and one and a quarter cups. This is enough for about 4 servings. You can easily double the recipe to make more.Ways to use: Strawberry purée is generally a little thinner than say raspberry purée. For this reason it's great served with breakfasts such as oatmeal, yogurt, pancakes and waffles. It's also great in smoothies, cocktails, with no-bake desserts such as panna cotta or white chocolate pots, or even in a salad dressing.Variations: Try the recipe with other fruits such as blackberries, blueberries or peaches. You can add a little more sugar or lemon juice if necessary, or cook the mixture for a few minutes first on the stove for a thicker puree. If you'd like to serve the puree over a cake or other dessert, you might want to thicken it in the same way described above. Alternatively, use this raspberry puree recipe instead.
