"In the past, the idea was to use up all the eggs and milk before Lent started the next day. These days it’s just a great excuse to eat delicious pancakes!"

PLAIN FLOUR 2 EGGS MILK BUTTER AND/OR OIL SUGAR & LEMON

Add eggs to flour, then slowly whisk in milk.

Add a little melted butter.

Heat a little butter on a medium heat.

Tilt the pan until the batter runs all over, right to the edges.

Cook for 2 to 2.5 minutes or until the underside is lightly golden (take a peek!).

Flip over and cook for another 30 seconds.

"Can you toss one in the air in the pan without it falling onto the floor?"

Squeeze over lemon juice, sprinkle over sugar!

Other classic toppings: 1. Nutella & banana 2. Ice cream & canned cherries

Top tips: 1. Let the batter 'rest'. 2.Cook on a medium heat. 3. Make a 'test' pancake. 4. Keep warm in oven (120F).
