1. mashed sweet potato 2. self raising flour 3. cocoa powder 4. salt & baking soda 5. eggs 6. vanilla 7. olive oil 8. maple syrup
Microwave the sweet potato for 6-8 mins, then scoop out & mash.
Combine the dry ingredients in a bowl.
Add everything else to the sweet potato and mix well.
Add to the dry ingredients and mix again.
Pour into baking pan & bake for 18 minutes.
Top should be just cooked & the centre still a bit gooey.
Combine frosting ingredients in food processor.
